Chicken Fingers

Lately I've been experimenting w/ Chicken Fingers.  My starting point has been a recipe from the back of a bisquick box.

Ultimate Chicken Fingers

3 or 4 boneless, skinless chicken breast halves (about 1 pound), cut crosswise into 1/2" strips
2/3 cup Original Bisquick mix
1/2 cup grated Parmesan cheese
1/2 teaspoon salt or garlic salt
1/2 teaspoon paprika
1 egg, slightly beaten
3 tablespoons butter or margarine, melted

Heat oven to 450°F. Line cookie sheet with foil; spray with cooking spray. In 1-gallon plastic resealable bag, combine baking mix, cheese, salt and paprika. Dip half the chicken strips into egg; place in bag of coating mixture. Seal bag; shake to coat. Place chicken on cookie sheet. Repeat to use up remaining chicken. Drizzle butter over chicken.

Bake 12-14 minutes, turning halfway through bake time with pancake turner, until no longer pink in center. Makes 4 servings.

The recipe alone turns out pretty good.  I've tried adding italian breadcrumbs, white pepper, etc.  But I've found that it changes the consistency enough that it doesn't bake right.  I will keep experimenting.

Foodnetwork Goodness

After a year of fasting from TV, we as a house broke fast and got extended basic cable.  So YES we have food network!

After many hours of watching food network, I've found that my favorite show is Everyday Italian with Giada De Laurentiis. (She has nice looking hands too)

Ever notice that?  All the tv cooks all have nice looking hands.  I wonder if they have like hand prep pre-show.

Anyways.... ever see something on food network and later months later "wish" you had the recipe.

Ingredients

  • Chicken (i used thighs)
  • 1 Bottle of Sierra Nevada Pale Ale
  • 1 Can of mandarin oranges
  • Sundried Tomatoes
  • Pepper
  • Cummin

Tomatoes - Inside down first

Zuchini and Squash - 1 part olive oil, 1 part lemon juice, pepper, garlic salt.  Grill.  Make sure to spread out the coals as to not burn the veggies.

.: Swedish Meatballs :. Improved Recipe

Here's the original with inline modifications.

 

Ingreds

  • costco meatballs
  • cream of mushroom soup
  • Heavy Cream(instead of milk w/ the soup)
  • Flour
  • Mustard (dijon works well too)
  • Butter
  • sour cream
  • onion chopped and flash fried
  • dill weed
  • chili powder
  • Cyanne

Directions

Preheat oven, and start cooking either rice or noodles.  Follow meatball oven directions ~15 min.  Chop onion, fry to a light crisp.  Add cream of mushroom and Heavy Cream/Mustard, cook about a minute.  Add sour cream.  Ratio should be about 2 to 1.  Stir.  Add salt/pepper, dill weed, and chili powder, 2 pinches of cyanne. Melt 2.5tbps butter and mix 2 tbps of flour.  Then add and mix in.   Stir.  Add in meatballs.  Mix to coat meatballs.  Serve over rice or pasta.

Descr

The smooth but ease of taste of swedish meatballs.  The balance of sour cream and dill weed give the taster a feeling of elegance yet simplicity.  All mixed together with the savory juicy meatballs. The added ingredients give the dish a much smoother and creamier texture.  Yea it a lot less healthy too, but this one might be worth it!
